The Easiest Plant Based Stir-Fry

Hi guys! A lot of people have asked me in the past few months whether or not I eat plant-based. The answer is yes and no! Currently, yes I am eating a mostly plant-based diet. This is for no reason other than I feel my best when I pack my diet full of light and easy foods like veggies. I've had the occasional salmon filet and last night I ate a homemade turkey burger (they were fantaaaastic- might post that recipe as well!) but for the most part I have been altering all of our recipes so that they're meatless for me. Eating plant based isn't difficult, you just have to be sure to get all of your nutrients! It's super important to NOT just switch the way you eat without being intentional. I made this orange & mango stir fry for Matthew and I not too long ago and it was wonderful! Let's dive in!


Ingredients:
3 bell peppers
approximately 1 1/2 cups sliced mushrooms
around 1 tsp freshly grated ginger
2 chopped mangos
a few tablespoons olive oil
1 tsp minced garlic
a few sprinkles cayenne pepper
a few splashes rice wine vinegar

To serve with:
cooked rice or quinoa
lime wedges

Process:
Chop all of the veggies to your liking. I cut the bell peppers in long strips, slice the mushrooms as opposed to dicing them, and cut the mangos into cubes. Add the bell peppers to a frying pan with a tablespoon of olive oil and cook them until they're tender. Add in the mushrooms and let them cook for around 5 minutes. I like to see the mushrooms darken ever so slightly- I think they test the best that way. Add 1 cup of the stir fry sauce (There should be extra, save that to add a little more if you need in the end. 1 cup was plenty for us as the flavor is strong.), minced garlic, a few pinches of freshly grated ginger, and a splash or two of rice wine vinegar. Even though the orange ginger stir fry sauce already has ginger in it, adding the fresh ginger gives the recipe a nice bright and fresh (duh) taste! Matthew even commented on the freshness and gave it five stars 😉 Anyway, wait for the sauce to bubble, then add the mango pieces. Cook just enough to warm the mango and serve over cooked brown rice. We also squeezed a small lime wedge over our dishes and it was delicious!
